Infusing water with the flavours of meat, vegetables, herbs and spices is one of the kitchen’s most basic transformations, and yet like most of cooking’s simple magics, it requires a bit of ‘skilling up’ to perfect. In this class, we’ll step through stock making from raw ingredients to clarification. We’ll make three stocks from different cuts, with entirely different characteristics:

The stocks we’ll make

All animal ingredients are organic and free range. All vegetable ingredients are organic, local and otherwise ethically sourced whenever possible.
  • white chicken stock
  • aromatic beef stock
  • fish stock
Please note, dishes might vary depending on seasonal availability of ingredients.

Each stock lends itself to particular flavours, so we’ll experiment a bit, with different recipes from divergent cuisines, all known for their magical stock-making skills:
