Pressure cookers save time and energy in the kitchen. In this demonstration, I will show you how to make the most of this sealed, high temperature environment, using some of the longest cookers in the business: lamb shanks, dried beans and stocks. Taste the results in the following dishes:
What we’ll be cooking
All animal ingredients are organic and free range. All vegetable ingredients are organic, local and otherwise ethically sourced whenever possible.
- braised lamb shanks with gremolata
- white polenta
- cannellini bean gratin
- whole oat porridge
- other dried bean and meat experiments
Please note, dishes might vary depending on seasonal availability of ingredients

Hi Nathan, just sent you an email with details of my next classes- hope you got it? Also, the classes are between 12 and 22 people, and although they aren’t hands on, you can always get involved if you’d like to try out something I’m showing you. This happens all the time. Plus, there’s loads to eat during the class.
